Serving size: 6 shrimp, Makes 8 servings

 

Ingredients

1/4 cup water
1/4 cup fresh lime juice
1/4 cup orange juice
1/4 cup diced spanish onion
1/3 cup dried apricots
2 tablespoons light brown sugar
1/4 teaspoon minced jalapeno
3/4 teaspoon minced garlic
1 1/4 teaspoons malt vinegar
3/4 teaspoon worcestershire sauce
1/8 teaspoon tabasco
1/8 teaspoon salt
48 jumbo 21/25 shrimp, raw

 

Instructions
In a medium saucepan over medium-high heat, combine all ingredients except shrimp. Bring to a boil then lower heat to a simmer and cook 20 minutes. Remove from heat and puree until consistency is smooth.
Brush shrimp with Apricot BBQ Sauce. Grill the shrimp over medium heat until cooked through, about 5 minutes.
