Serving size: 1 1/2 cups, Makes 6 servings

Ingredients

2 tablespoons canola oil
1 1/2 cups thinly sliced onion
2 cups chopped kale
10 cups water
2 cups dry barley
2/3 cup crumbled goat cheese
1 teaspoon salt
1/4 teaspoons black pepper

Instructions

Heat oil in a pot. Cook onions until caramelized.
Stir in kale and cook just until wilted. Set aside.
Bring water up to a boil. Stir in barley and reduce to a simmer. Cook until barley is very tender.
Once barley is cooked, stir in reserved onion/kale mixture, goat cheese, salt and pepper. Continue cooking until heated through.
